    Chop the Vegetables

    Finely chop the onion, celery, and green bell pepper. Mince the garlic cloves.

    Prepare the Crawfish

    If using fresh crawfish, ensure they are cleaned and tails are separated. If using frozen, thaw them beforehand.

    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and bell pepper. Sauté for about 5 minutes until softened.

    Add Garlic

    Stir in the minced garlic and sauté for an additional 2 minutes until fragrant.

    Add Crawfish and Spices

    Add the crawfish tails, cayenne pepper, paprika, thyme, salt, and black pepper. Stir well to combine and cook for about 3-4 minutes.

    Add Stock

    Pour in the fish stock and bring the mixture to a simmer. Let it cook for 15 minutes, allowing the flavors to meld.

    Incorporate Cream

    Lower the heat and stir in the heavy cream. Allow the bisque to heat through for another 5 minutes without boiling.

    Blend the Bisque

    For a smoother texture, use an immersion blender to puree the bisque to your desired consistency. Alternatively, blend in batches in a countertop blender.

Serving

    Ladle the bisque into bowls and garnish with fresh parsley and green onions. Serve hot.
