Crawdads

Method

Preparation

  1. 1

    Clean the Crawdads

In a large bowl, fill it with water and add the live crawdads. Allow them to sit for about 30 minutes. This will help clean them of any debris. After 30 minutes, rinse the crawdads under cold running water.

  2. 2

    Prepare the Ingredients

While the crawdads are soaking, wash the corn and potatoes. Cut the corn cobs in half and chop the potatoes into quarters.

  3. 3

    Prepare the Seasoning

In a small bowl, combine the Cajun seasoning and salt. Set aside for later use.

Cooking

  1. 4

    Boil the Water

In a large pot, bring 4 liters of water to a rolling boil. Add the salt and the prepared Cajun seasoning mixture to the boiling water.

  2. 5

    Add Vegetables

Once the water is boiling, add the quartered potatoes and bay leaves. Let them cook for about 10 minutes.

  3. 6

    Add Corn

After the potatoes have cooked for 10 minutes, add the halved corn on the cob and cook for an additional 5 minutes.

  4. 7

    Cook the Crawdads

Next, add the cleaned crawdads to the pot along with the crushed garlic cloves and the whole lemon. Stir well and cover the pot. Cook for 3-5 minutes until the crawdads turn bright red and are cooked through.

  5. 8

    Finish with Butter

Once cooked, remove the pot from heat. Add the butter and stir until melted and well combined with the broth.
