Mousse Base Preparation

Melt the Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

Separate Eggs
Carefully separate the egg yolks from the egg whites. Place the egg yolks in a large mixing bowl and the egg whites in a separate clean bowl.

Mix Egg Yolks and Sugar
Add granulated sugar and vanilla extract to the egg yolks. Whisk until the mixture is pale and creamy.

Combine Chocolate Mixture
Slowly add the melted chocolate mixture to the egg yolk mixture, stirring continuously until well combined.

Whip Egg Whites
Using an electric mixer, beat the egg whites with a pinch of salt until stiff peaks form.

Fold in Egg Whites
Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Chill the Mousse
Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours or until set.

Prepare the Whipped Cream
In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract.

Whip the Cream
Using an electric mixer, whip the cream mixture until soft peaks form.

Once the mousse is set, top each serving with a dollop of whipped cream before serving.
