    Pat the catfish fillets dry with paper towels. Rub the spice mix generously over both sides of each fillet, ensuring an even coating.

    In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

    Once the oil is hot, carefully place the coated catfish fillets in the skillet. Cook for about 3-4 minutes on each side, or until the fillets are blackened and cooked through. Avoid overcrowding the pan; cook in batches if necessary.
