Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, instant yeast, and salt. Whisk until well blended.

    Heat Milk and Butter

    In a small saucepan, heat the whole milk and unsalted butter over medium heat until the butter is melted and the mixture is warm (about 110°F or 43°C).

    Combine Wet Ingredients

    In a separate bowl, whisk together the eggs and vanilla extract. Once the milk mixture has cooled slightly, add it to the egg mixture and stir to combine.

    Form the Dough

    Pour the wet ingredients into the dry ingredients. Stir until a sticky dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Frying and Serving

    Prepare for Frying

    In a deep pot or heavy skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Shape the Beignets

    Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out to about ½ inch thick. Cut into squares or circles using a knife or cookie cutter.

    Fry the Beignets

    Carefully drop the dough pieces into the hot oil, frying a few at a time to avoid overcrowding. Fry for about 2-3 minutes on each side until golden brown.

    Drain and Dust

    Remove the beignets with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. While still warm, dust generously with powdered sugar.

    Serve the beignets warm, and enjoy with a cup of coffee or hot chocolate.
