    Wash and dice the carrots and sweet potato into small, uniform pieces. This ensures even cooking.

    Measure out all the ingredients, including the optional parsley and pumpkin puree, if you choose to use them.

Cooking

    Cook the Ground Beef

    In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until fully browned, breaking it apart with a spoon, about 5-7 minutes.

    Stir in the diced carrots, sweet potato, and frozen peas. Cook for an additional 5 minutes until the vegetables begin to soften.

    Add Broth and Oats

    Pour in the chicken broth and add the rolled oats. Stir well to combine all ingredients. Bring to a simmer.

    Reduce the heat to low and let the mixture simmer for about 15-20 minutes, or until the sweet potato is tender and the mixture has thickened. Stir occasionally to prevent sticking.
