Method
Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear. This helps to remove excess starch.

Cook the Rice
Combine the rinsed rice and 1.5 cups of water in a medium saucepan. Bring to a boil over medium-high heat.

Simmer
Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and water is absorbed.

Let it Rest
Remove from heat and let it sit, covered, for an additional 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice.
Prepare Tuna and Vegetables

Marinate Tuna
In a bowl, combine diced Ahi tuna, soy sauce, and sesame oil. Mix well and set aside to marinate for about 10-15 minutes.

Prepare Vegetables
Slice the cucumber and watermelon radish thinly. Set aside.

Prepare Edamame
If using frozen edamame, boil them in salted water for about 5 minutes, then drain and set aside.
Assemble the Poke Bowl

Add Sushi Rice
In a bowl, start with a base of seasoned sushi rice.

Add Toppings
Top the rice with marinated tuna, cucumber, edamame, and watermelon radish slices.

Garnish
Sprinkle with sesame seeds and chopped green onions. Add strips of nori on top for garnish.
