Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into long strips, approximately 1/4 inch thick.

Soak the Potatoes
Place the cut fries in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch.

Dry the Fries
Drain the fries and pat them dry with a clean kitchen towel or paper towels to ensure they are free of moisture.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the fries to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 5-7 minutes until golden brown.

Drain and Season
Remove fries from the oil and let them drain on paper towels. While still hot, sprinkle with truffle salt to taste.

Prepare the Parmesan Cloud
In a mixing bowl, combine grated Parmesan cheese, cream cheese, and heavy cream.

Blend
Using a hand mixer or blender, blend the mixture until smooth and fluffy. Adjust the consistency with more heavy cream if necessary.
Garlic Aioli

Prepare the Garlic Aioli
In a bowl, combine the mayonnaise, minced garlic cloves, lemon juice, salt, and black pepper.

Mix Well
Whisk together until all ingredients are well incorporated and the aioli is smooth. Adjust seasoning to taste.
