Potato Chips

    Prepare Potatoes

    Wash and peel the Russet potatoes. Slice them thinly using a mandoline or a sharp knife (about 1/8 inch thick).

    Heat Oil

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry Chips

    Carefully add the potato slices in batches to the hot oil. Fry until they are golden brown and crispy, about 2-3 minutes.

    Drain and Season

    Remove the chips with a slotted spoon and place them on paper towels to drain excess oil. Immediately sprinkle with sea salt while they are still hot.

Caramelized Onion Dip

    Caramelize Onions

    Slice the yellow onions thinly. In a pan over medium heat, add a little oil and cook the onions slowly, stirring occasionally, until they turn golden brown and caramelized (about 20-30 minutes).

    Mix Dip Ingredients

    In a large mixing bowl, combine the cream cheese, sour cream, mayonnaise, garlic powder, salt, and black pepper. Mix until smooth.

    Add Onions and Chives

    Fold in the caramelized onions and chopped chives into the dip mixture. Adjust seasoning to taste.

Crispy Shallots

    Prepare Shallots

    Peel and thinly slice the shallots.

    Coat Shallots

    In a bowl, combine the flour and salt. Toss the sliced shallots in the flour mixture until well coated.

    Heat Oil for Frying

    In a deep skillet or pot, heat the vegetable oil to 350°F (175°C).

    Fry Shallots

    Fry the coated shallots in batches until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
