Meatballs

    Prepare the Meatball Mixture

    In a large mixing bowl, combine ground pork, ground veal, minced garlic, breadcrumbs, grated Parmesan cheese, egg, chopped parsley, salt, and black pepper. Mix until well combined.

    Form the Meatballs

    Using your hands, form the mixture into small balls, about 1 inch in diameter. Place on a baking sheet lined with parchment paper.

    Bake the Meatballs

    Preheat the oven to 400°F (200°C). Bake the meatballs for 20-25 minutes or until cooked through and golden brown.

Bolognese Sauce

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add the Tomatoes and Wine

    Stir in the tomato puree, crushed canned tomatoes, and red wine. Add the bay leaf, salt, and black pepper.

    Simmer the Sauce

    Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, stirring occasionally.

Parmesan Garlic Polenta

    Boil the Water

    In a medium pot, bring 4 cups of water to a boil.

    Cook the Polenta

    Once boiling, slowly whisk in the polenta. Reduce heat to low and cook for about 30 minutes, stirring frequently until thickened.

    Stir in minced garlic, grated Parmesan cheese, salt, and black pepper. Mix well until creamy.

    Preheat the Oven

    Preheat the oven to 375°F (190°C).

    In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.

    Fold in Cheese

    Gently fold in the grated Parmesan cheese into the beaten egg whites until just combined.

    Bake the Cloud

    Spoon the mixture onto a baking sheet lined with parchment paper and shape into clouds. Bake for 10-12 minutes until golden and puffed.

Assembly and Garnish

    Plate the Dish

    On a large plate, spread a layer of Parmesan garlic polenta, top with baked meatballs, and generously spoon over the Bolognese sauce.

    Add the Parmesan Cloud

    Place the Parmesan cloud on top of the meatballs and sauce.

    Finish by garnishing with fresh basil leaves.
