Preparing the Crostini

Slice the Sourdough
Preheat your oven to 375°F (190°C). Slice the sourdough bread into 1/2 inch thick slices.

Brush with Olive Oil
Place the slices on a baking sheet and brush both sides lightly with olive oil. Sprinkle with salt.

Bake the Crostini
Bake in the preheated oven for about 10-12 minutes or until golden brown and crispy. Remove and let cool.
Preparing the Toppings

Prepare the Cheese Mix
In a bowl, combine the bleu cheese and cream cheese. Use a fork to blend them together until smooth and creamy.

Crisp the Prosciutto
In a skillet over medium heat, add the prosciutto slices and cook for about 2-3 minutes on each side, until crispy. Remove and let cool, then crumble into pieces.

Slice the Figs
Wash the fresh figs and slice them into quarters or halves, depending on their size.
Assembling the Bruschetta

Spread the Cheese
Take the cooled crostini and spread a generous layer of the whipped bleu cheese mixture on each slice.

Top with Figs
Place a few pieces of sliced figs on top of the cheese on each crostini.

Add Prosciutto and Drizzle
Sprinkle the crispy prosciutto crumbles over the figs. Drizzle with hot honey and balsamic glaze.
