Preparing the Batter

    Melt the Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

    Mix Sugar and Eggs

    In a separate bowl, whisk together the granulated sugar, eggs, and egg yolks until the mixture is pale and slightly thickened.

    Combine Mixtures

    Add the melted chocolate mixture to the egg mixture, whisking continuously until well combined. Stir in the vanilla extract and a pinch of salt.

    Add Flour

    Sift the all-purpose flour over the chocolate mixture and gently fold it in using a rubber spatula until no flour streaks remain.

Baking the Cakes

    Prepare Ramekins

    Preheat your oven to 425°F (220°C). Grease four individual ramekins with butter and dust with cocoa powder to prevent sticking.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Bake

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

    Cool Slightly

    Remove the ramekins from the oven and let them sit for 1 minute. Carefully run a knife around the edges to loosen the cakes.

    Invert and Serve

    Invert each ramekin onto a plate and gently tap to release the cake. Serve immediately with a scoop of vanilla ice cream on the side and dust with powdered sugar.
