Prepare the Brussel Sprouts
Rinse the Brussel sprouts under cold water to remove any dirt. Trim the ends and remove any yellow or damaged outer leaves. Cut each sprout in half lengthwise.

Chop the Mint
Rinse the fresh mint leaves under cold water. Pat dry with a paper towel. Finely chop the leaves and set aside.

Sauté the Brussel Sprouts
In a large skillet, heat the olive oil over medium heat. Once hot, add the halved Brussel sprouts cut side down. Let them cook without stirring for about 5-7 minutes until they are golden brown on the cut side.

Season and Toss
After the Brussel sprouts are browned, add salt and black pepper. Stir to combine and cook for an additional 5 minutes, stirring occasionally, until they are tender.

Add Lemon Zest and Mint
Once the Brussel sprouts are cooked, remove the skillet from heat. Add the lemon zest and chopped mint. Toss gently to combine all the flavors.
