Cook the Spaghetti
In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery. Sauté for about 5-7 minutes or until the vegetables are softened.

Deglaze and Simmer
Pour in the red wine and let it simmer for about 3-4 minutes, allowing the alcohol to evaporate. Then, add the crushed tomatoes, dried oregano, salt, and pepper. Stir well to combine.

Cook the Sauce
Reduce the heat to low and let the sauce simmer for at least 30 minutes, stirring occasionally, until it thickens. Adjust seasoning with more salt and pepper if needed.

Combine and Serve
Serve the cooked spaghetti topped with the Bolognese sauce. Garnish with stracciatella cheese and torn basil leaves. Enjoy your meal!
