Cooking Instructions

  1. 1

    Prepare the Sweet Potato Cream

Peel and chop the sweet potatoes into chunks. Boil them in a pot of salted water until tender (approximately 15 minutes). Drain and return to the pot.

  2. 2

Add heavy cream, salt, and black pepper to the sweet potatoes. Mash until smooth and creamy. Set aside and keep warm.

  3. 3

    Cook the Asparagus

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus and sauté for about 5-7 minutes until tender, seasoning with salt and pepper to taste.

  4. 4

    Cook the Fish

In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Season the fish fillets with salt and black pepper.

  5. 5

Place the fish fillets skin-side down (if applicable) in the hot skillet. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has a nice golden crust.

  6. 6

    Plate the Dish

On each plate, create a bed of sweet potato cream. Arrange the sautéed asparagus alongside the fish fillet. Garnish with lemon wedges for a fresh touch.
