    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

    Combine Wet Ingredients

    In another bowl, mix the vegetable oil, eggs, and vanilla extract until well combined.

    Combine Mixtures

    Gradually add the wet mixture to the dry ingredients, stirring until just combined. Fold in the grated carrots and walnuts, if using.

    Bake the Cake

    Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

    Cool the Cakes

    Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

    Prepare the Frosting

    While the cakes cool, prepare the cream cheese frosting by beating together 8 oz of cream cheese, 1/2 cup of unsalted butter, 4 cups of powdered sugar, and 2 tsp of vanilla extract until smooth and creamy.

    Frost the Cake

    Once the cakes are completely cooled, place one layer on a serving plate, spread a layer of frosting on top, then place the second layer and frost the top and sides of the cake.
