Cheesecake Preparation
Prepare the Crust
In a medium bowl, mix the graham cracker crumbs, melted unsalted butter, and salt until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for about 10 minutes until set. Remove from oven and let cool.
Make the Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue to beat until combined. Add sour cream, eggs one at a time, and vanilla extract. Mix until the batter is smooth and creamy.
Bake the Cheesecake
Pour the filling over the cooled crust in the springform pan. Bake at 325°F (160°C) for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for about 1 hour.
Chill and Serve
Once cooled, refrigerate the cheesecake for at least 4 hours or overnight. Before serving, top with raspberry jam and sliced strawberries.
