Melt the Chocolate
Chop the dark chocolate into small pieces and melt it gently in a heatproof bowl over a pot of simmering water (double boiler method) or in the microwave in 30-second intervals, stirring until smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a separate mixing bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip it. Then, fold in the vanilla extract. Set aside.

Whisk Egg Yolks and Sugar
In another bowl, whisk the egg yolks with the granulated sugar until the mixture is pale and fluffy. Stir in the melted chocolate until well combined.

Combine Mixtures
Gently fold the whipped cream into the chocolate mixture until just combined. Then, carefully fold in the beaten egg whites in three additions, being cautious not to deflate the mixture.

Chill the Mousse
Spoon the mousse into serving cups or bowls and refrigerate for at least 2 hours, or until set.

Serve
Once set, serve the chocolate mousse chilled, optionally topped with whipped cream or chocolate shavings.
