Dough Preparation

Activate Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Mix Ingredients

In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture and olive oil.

Knead the Dough

Mix until a dough forms. Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let Dough Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.

Cook Sauce Ingredients

In a saucepan, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.

Add Tomatoes

Add the Valoroso pear tomatoes, salt, black pepper, and chopped basil. Simmer for 20-25 minutes, stirring occasionally, until the sauce thickens.

Blend Sauce

Use an immersion blender or transfer to a blender and blend until smooth or leave it chunky as per your preference.

Pizza Assembly and Cooking

Preheat Oven

Preheat your wood-fired oven to 700°F (370°C).

Shape Pizza Dough

Once the dough has risen, punch it down and divide it into two equal portions. Shape each portion into a round disk, stretching it to about 16 inches in diameter.

Add Sauce

Spread a generous amount of the prepared sauce over the dough, leaving a small border around the edges.

Add Toppings

Tear buffalo mozzarella into pieces and distribute evenly over the sauce. Sprinkle shaved parmesan on top and add fresh basil leaves to taste.

Cook the Pizza

Carefully slide the pizza onto the hot pizza stone in the wood-fired oven. Cook for 90 seconds to 2 minutes until the crust is golden and the cheese is bubbling.

Serve

Remove the pizza from the oven, let it cool for a minute, then slice into 8 pieces and serve hot.
