Dough Preparation

Activate Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

Mix Dough

In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a dough begins to form.

Knead Dough

Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Cook Bacon

In a skillet over medium heat, cook the sliced smoked bacon until crispy. Remove and drain on paper towels, then chop into small pieces.

Prepare Spinach

In the same skillet, add a tablespoon of olive oil and sauté the fresh spinach until wilted. Season with salt and pepper to taste.

Preheat Oven

Preheat your oven to 475°F (245°C).

Roll Out Dough

Once the dough has risen, punch it down and roll it out on a floured surface to your desired pizza shape and thickness.

Add Toppings

Spread ricotta cheese evenly over the rolled-out dough, then sprinkle the sautéed spinach and crispy bacon on top.

Cook Eggs

In a separate skillet, cook the eggs over medium heat until the whites are set but the yolks are still slightly runny (over medium).

Carefully place the cooked eggs on top of the pizza.

Bake Pizza

Transfer the pizza to a baking sheet or pizza stone and bake in the preheated oven for about 12-15 minutes, until the crust is golden and the cheese is bubbly.

Remove the pizza from the oven, let it cool for a few minutes, slice, and serve hot.
