Make the Sauce

In a medium saucepan, combine Valoroso pear tomatoes, olive oil, chopped rosemary, chopped oregano, salt, and black pepper. Cook over medium heat for about 15 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and set aside.

Prepare the Dough

In a small bowl, dissolve active dry yeast in warm water and let it sit for about 5 minutes until frothy. In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil, and mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.

Let the Dough Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Crust

Preheat the oven to 475°F (245°C). After the dough has risen, punch it down and roll it out into a circle on a floured surface. Transfer to a pizza stone or baking sheet. Brush the crust with olive oil and sprinkle with everything bagel seasoning.

Assemble the Pizza

Spread the prepared pizza sauce evenly over the crust. Leave a small border around the edges.

Bake the Pizza

Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown.

Add Toppings

Remove the pizza from the oven and top with wild arugula. Drizzle with additional olive oil before serving.
