Method

Prepare the Wings

    Season the Wings

    In a large bowl, combine the chicken wings, salt, black pepper, and garlic powder. Toss the wings until they are evenly coated with the seasoning.

    Smoke the Wings

    Preheat your smoker or wood-fired grill to 225°F (107°C). Place the seasoned wings in the smoker and cook for about 1 hour until they reach an internal temperature of 165°F (74°C).

Make the Sauce

    Prepare Sauce Ingredients

    While the wings are smoking, mince the garlic cloves and set aside.

    Combine Sauce Ingredients

    In a saucepan over medium heat, combine the peach preserves, soy sauce, minced garlic, red pepper flakes, apple cider vinegar, honey, and olive oil. Stir well until the mixture is smooth and heated through, about 5-7 minutes.

Toss and Serve

    Toss Wings in Sauce

    Once the wings are smoked and the sauce is ready, remove the wings from the smoker and place them in a large mixing bowl. Pour the sweet & spicy peach & garlic sauce over the wings and toss until they are thoroughly coated.

    Garnish and Serve

    Transfer the coated wings to a serving platter. Crumble Queso Fresco over the top and garnish with fresh cilantro if desired. Serve immediately.
