Pizza Dough Preparation
- 1
Activate Yeast
In a small bowl, combine warm water and sugar. Sprinkle yeast over the top and let it sit for about 5-10 minutes until frothy.
- 2
Mix Dry Ingredients
In a large mixing bowl, combine flour and salt.
- 3
Combine Ingredients
Once the yeast is activated, add it to the flour mixture along with olive oil. Mix until a dough forms.
- 4
Knead Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
- 5
Let Dough Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Topping Preparation
- 6
Prepare Fennel Sausage
In a skillet over medium heat, cook fennel sausage until browned and cooked through, breaking it up into smaller pieces as it cooks.

Pizza Assembly
- 9
Preheat Oven
Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up.
- 10
Shape Dough
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a 12-inch round.
- 11
Add Toppings
Transfer the rolled-out dough to a pizza peel or baking sheet. Spread mozzarella cheese evenly over the surface, followed by the fennel sausage, smoked onions, roasted mushrooms, and tomato slices. Sprinkle with grated Parmesan.
- 12
Bake Pizza
Carefully slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake for about 12-15 minutes, or until the crust is golden and the cheese is bubbly.
- 13
Garnish and Serve
Remove the pizza from the oven, let it cool for a minute, then garnish with fresh basil. Slice and serve hot.
