Salad Base

Method

BBQ Chicken Preparation

  1. 1

    Marinate and Grill Chicken

Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Brush with smoky BBQ sauce during the last few minutes of cooking.

  2. 2

    Rest and Slice Chicken

Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.

Caesar Dressing Preparation

  1. 3

    Prepare Caesar Dressing

In a mixing bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, salt, and black pepper until well combined. Adjust seasoning to taste.

Salad Assembly

  1. 4

    Assemble the Salad

In a large bowl, add chopped romaine lettuce, halved heirloom cherry tomatoes, sliced red onion, and croutons. Toss to combine.

  2. 5

    Add Chicken and Dressing

Top the salad with sliced BBQ chicken and drizzle with Caesar dressing. Toss gently until everything is well coated.

  3. 6

    Serve

Sprinkle grated Parmesan cheese on top and serve immediately.
