In a large saucepan over medium heat, melt the unsalted butter until it is foamy but not browned.

Add the all-purpose flour to the melted butter, whisking constantly for about 2-3 minutes until the mixture is smooth and lightly golden.

Slowly pour in the turkey or chicken broth while continuing to whisk to avoid lumps. Bring the mixture to a simmer.

Incorporate Soy Sauce and Cream
Stir in the soy sauce and heavy cream, mixing well until fully incorporated.

Add salt, black pepper, garlic powder, onion powder, and dried thyme. Taste and adjust seasoning if needed.

Allow the gravy to simmer for an additional 5-10 minutes, stirring occasionally until it thickens to your desired consistency.
