Coleslaw Preparation

Mix the Vegetables
In a large mixing bowl, combine the shredded green cabbage and grated carrots.

In a separate bowl, whisk together the vegan mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Pour the dressing over the cabbage and carrots. Toss until well coated. Set aside to let the flavors meld.

Mix the Dressing Ingredients
In a small bowl, whisk together the vegan mayonnaise, ketchup, Dijon mustard, sweet pickle relish, and paprika until smooth and well combined.
Sandwich Assembly

Toast the Bread (Optional)
If desired, toast the slices of whole grain or rye bread until golden brown.

Spread a generous amount of the Russian dressing on one side of each slice of bread.
