Sausage and Onions

Prepare the Sausage

Slice the smoked sausage into bite-sized pieces.

Sauté the Onions

In a large skillet, heat olive oil over medium heat. Add the sliced onion and sauté for about 5 minutes until they start to soften.

Cook the Sausage

Add the sliced sausage to the skillet with the onions. Season with salt and black pepper. Cook for an additional 8-10 minutes, stirring occasionally until the sausage is browned.

Prepare the Mushrooms

Clean the button mushrooms and slice them in half.

Sauté the Garlic

In a separate pan, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Cook the Mushrooms

Add the sliced mushrooms to the pan with garlic. Cook for about 5 minutes until they begin to soften.

Add Wine and Thyme

Pour in the red wine and add thyme. Bring to a simmer and cook for another 10-15 minutes until the wine reduces and the mushrooms are tender.

Savory BBQ Sauce

Combine Ingredients

In a small bowl, mix together the BBQ sauce, apple cider vinegar, honey, Worcestershire sauce, and smoked paprika until well combined.

Pour the combined sauce into a saucepan and heat over low heat for about 5 minutes, stirring occasionally.

Once the sausage, onions, and mushrooms are cooked, combine them in the skillet with the BBQ sauce. Stir well to coat everything evenly.
