Mozzarella Preparation

    Prepare the Mozzarella

    In a large pot, bring water to a gentle simmer. Add salt to the water. Tear the fresh mozzarella into bite-sized pieces and gently place them into the simmering water. Allow them to soften for about 5-7 minutes, stirring occasionally. Remove from heat and set aside.

Pesto Sauce Preparation

    Make the Pesto Sauce

    In a food processor, combine fresh basil leaves, pine nuts, grated Parmesan cheese, minced garlic, olive oil, salt, and pepper. Blend until smooth, scraping down the sides as needed. Adjust seasoning to taste, if necessary. Set aside.

Assembly

    Assemble the Dish

    On a serving plate, place the softened mozzarella pieces. Drizzle generously with the fresh pine nut pesto sauce. Thinly slice the 18-month aged prosciutto and arrange it on top of the mozzarella. Serve with slices of artisan focaccia bread on the side.

    Drizzle the fig balsamic glaze over the assembled mozzarella and prosciutto. Serve immediately and enjoy!
