Method
Preparing the Wings

Season the Wings
In a large bowl, combine the chicken wings with salt, black pepper, garlic powder, and onion powder. Toss until the wings are evenly coated with the seasoning.

Preheat the Smoker
Preheat your smoker to 225°F (107°C) using your preferred wood chips for smoking.

Smoke the Wings
Place the seasoned wings on the smoker rack and smoke for 1.5 to 2 hours, until they reach an internal temperature of 165°F (74°C) and are infused with a smoky flavor.
Making the Sweet & Sassy Bourbon Sauce

Combine Sauce Ingredients
In a medium saucepan over medium heat, combine Knob Creek Bourbon, brown sugar, ketchup, apple cider vinegar, soy sauce, Worcestershire sauce, minced garlic, black pepper, and red pepper flakes.

Simmer the Sauce
Bring the mixture to a simmer, stirring occasionally. Allow it to cook for about 15-20 minutes until the sauce thickens slightly.

Cool the Sauce
Remove the sauce from heat and let it cool slightly before tossing it with the wings.
Finalizing the Wings

Toss the Wings
Once the wings are done smoking, place them in a large bowl and pour the Sweet & Sassy Bourbon Sauce over them. Toss the wings until they are evenly coated.

Transfer the wings to a serving platter and enjoy them hot with your favorite dipping sauce.
