Preparing the Potatoes

Wash and Peel the Potatoes
Wash the russet potatoes thoroughly under cold water. Peel the skin off using a vegetable peeler.

Cut the Potatoes
Cut the peeled potatoes into even sticks, about 1/4 inch thick to ensure even cooking.

Soak the Potatoes
Place the cut potato sticks into a large bowl of cold water. Soak for at least 30 minutes to remove excess starch.
Frying the Potatoes

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Dry the Potatoes
After soaking, drain the potatoes and spread them on a clean kitchen towel to dry completely.

Fry the Potatoes
Carefully add a handful of the dried potato sticks to the hot oil. Fry in batches to avoid overcrowding, cooking for about 4-5 minutes or until golden brown.

Drain and Cool
Using a slotted spoon, remove the fries from the oil and drain them on paper towels to absorb excess oil.
