Wings Preparation

    Prepare the Wings

    Preheat your wood-fired grill to medium-high heat (about 400°F). In a large bowl, toss the chicken wings with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated.

    Grill the Wings

    Place the chicken wings on the grill grates and cook for about 30-35 minutes, turning occasionally, until the wings are golden brown and cooked through (internal temperature should reach 165°F).

Sassy Sauce Preparation

    Make the Sassy Sauce

    In a saucepan over medium heat, melt the butter. Once melted, add the hot sauce, honey, garlic powder, and cayenne pepper. Stir well and bring to a simmer for about 5 minutes until slightly thickened.

Southwest Ranch Preparation

    Prepare the Ranch Dressing

    In a medium bowl, mix together mayonnaise, sour cream, dried dill, garlic powder, onion powder, lime juice, salt, and black pepper until smooth and creamy. Refrigerate until serving.

Serving

    Once the wings are cooked, toss them in the sassy sauce until well coated. Serve immediately with the southwest ranch dressing and celery sticks on the side.
