Turkey Preparation

Preheat the Oven
Preheat your oven to 325°F (165°C).

Prepare the Turkey
Pat the whole turkey dry and rub it all over with olive oil. Season generously with salt, black pepper, garlic powder, and onion powder.

Roast the Turkey
Place the turkey in a roasting pan and roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C). This should take approximately 3-4 hours for a 12 lb turkey.

Rest the Turkey
Once cooked, remove the turkey from the oven and let it rest for at least 30 minutes before pulling the meat.

Pull the Turkey
Once cooled, pull the turkey meat from the bones and set aside.
Coleslaw Preparation

Mix the Vegetables
In a large bowl, combine shredded green cabbage and grated carrots.

Prepare the Dressing
In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Combine the Coleslaw
Pour the dressing over the cabbage and carrots mixture. Toss until everything is evenly coated. Refrigerate for at least 30 minutes to allow flavors to meld.

Prepare the Rolls
Slice the bread rolls in half and lay out the bottom halves on a serving platter.

Layer the Ingredients
On each roll, place a generous amount of pulled turkey, followed by a slice of provolone cheese, a scoop of coleslaw, and a drizzle of Russian dressing.

Add Mayonnaise
Spread additional mayonnaise on the top halves of the rolls, if desired.

Place the top halves on the assembled sandwiches and serve immediately.
