Prepare the Toppings

Chop the Tomatoes
Wash and dice the local organic tomatoes into small pieces. Place them in a mixing bowl.

Prepare the Garlic
Peel and finely mince the garlic cloves. Add them to the bowl with the tomatoes.

Add the Basil
Tear the fresh basil leaves into smaller pieces and add them to the bowl. Mix again to combine all ingredients.

Prepare the Mozzarella
Cut the mozzarella into small cubes or tear it into pieces and set it aside.
Prepare the Bread

Slice the Bread
Take the baguette or Italian bread and slice it into 1-inch thick pieces. You should have about 6 slices.

Toast the Bread
Preheat your oven to 400°F (200°C). Place the bread slices on a baking sheet and toast them in the oven for about 5-7 minutes or until they are golden brown.
Assemble the Bruschetta

Top the Bread
Remove the toasted bread from the oven. Spoon the tomato mixture generously onto each slice of bread. Ensure each piece is topped with some mozzarella.

Serve
Drizzle a little more Extra Virgin Olive Oil on top if desired. Serve immediately while the bread is still warm.
