Prepare the Coleslaw

Chop the Vegetables
Finely shred the green cabbage and grate the carrot. Combine them in a large bowl.

Mix the Dressing
In a separate bowl, mix together the mayonnaise, apple cider vinegar, salt, pepper, and sugar until smooth.

Pour the dressing over the cabbage and carrot mixture. Toss until well coated. Refrigerate for at least 30 minutes before assembling the sandwich.
Prepare the Russian Dressing

Mix the Dressing
In a small bowl, combine mayonnaise, ketchup, horseradish, and paprika. Stir until well blended.
Assemble the Sandwich

Heat the Pastrami
In a skillet over medium heat, warm the pastrami slices for about 3-5 minutes until heated through.

Toast the Bread
While the pastrami is heating, toast the rye bread slices until golden brown.

Layer the Ingredients
On one slice of toasted rye bread, layer the warm pastrami, followed by a slice of Swiss cheese, and a generous helping of coleslaw. Spread a tablespoon of Russian dressing on the second slice of bread.

Top the coleslaw with the second slice of bread, dressing side down. Press gently to hold the sandwich together.

Cut the sandwich in half and serve immediately with extra coleslaw on the side if desired.
