Cannoli Shells

Prepare the Dough
In a large bowl, combine the flour, granulated sugar, salt, and melted butter. Mix until crumbly.

Add Wet Ingredients
Stir in the egg yolks and white wine (or vinegar) until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll Out the Dough
Divide the dough into smaller pieces and roll out thinly, about 1/8 inch thick.

Cut and Shape Shells
Cut the dough into circles (about 4 inches in diameter). Wrap each circle around a cannoli tube and seal the edges with a bit of water.

Fry the Shells
Heat oil in a deep fryer or large saucepan to 350°F (175°C). Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Prepare the Filling
In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth.

If desired, fold in chocolate chips and/or chopped nuts for added texture and flavor.

Chill the Filling
Cover the filling and refrigerate for at least 30 minutes to firm up.

Fill the Shells
Using a piping bag or a spoon, fill each cooled cannoli shell with the ricotta filling.

Sprinkle the filled cannoli with powdered sugar for garnish.
