Prepare the Pasta
Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.

Make the Filling
In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add chopped spinach and cook until wilted. Remove from heat and let cool slightly. In a bowl, mix ricotta cheese, half of the mozzarella cheese, wilted spinach, salt, pepper, and dried Italian herbs until well combined.

Stuff the Shells
Preheat the oven to 375°F (190°C). Stuff each pasta shell with the ricotta mixture and place in a greased baking dish.

Add Sauce and Cheese
Pour marinara sauce over the stuffed shells. Sprinkle the remaining mozzarella and Parmesan cheese on top.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.
