Preparation of Crab Cakes
Prepare the Crab Mixture
In a large bowl, combine the crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, eggs, bread crumbs, Old Bay seasoning, salt, and pepper. Mix gently until well combined. Be careful not to break up the crab meat too much.
Form the Cakes
Shape the mixture into patties, about 3 inches in diameter and 1 inch thick. Place the patties on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
Sauté the Crab Cakes
In a large skillet, heat the olive oil over medium heat. Add the crab cakes to the skillet (in batches if necessary) and cook for about 4-5 minutes on each side, or until golden brown and heated through.
