In a large pot, bring salted water to a boil. Add the lobster tails and cook for about 8-10 minutes until they turn bright red. Remove the lobster tails and let them cool. Reserve the cooking water.

Cook the Lobster

In the same pot, melt the butter over medium heat. Add the onion, carrot, celery, and garlic. Sauté until the vegetables are soft, about 5-7 minutes.
