Lobster Bisque Directions
Cook the Lobster
In a large pot, bring salted water to a boil. Add the lobster tails and cook for about 8-10 minutes until they turn bright red. Remove the lobster tails and let them cool. Reserve the cooking water.
Add Tomato Paste and Wine
Stir in the tomato paste and cook for another 2 minutes. Then add the dry white wine and let it simmer until reduced by half.
Add Stock and Lobster
Pour in the seafood stock and the reserved lobster cooking water. Bring to a simmer. Meanwhile, remove the lobster meat from the tails and chop it into bite-sized pieces. Add the lobster meat to the pot.
Blend the Soup
Using an immersion blender, blend the bisque until smooth. If you prefer a chunkier texture, blend only half.
Finish with Cream and Seasoning
Stir in the heavy cream, salt, black pepper, and cayenne pepper. Let it simmer for an additional 5-10 minutes.
Serve
Ladle the bisque into bowls and garnish with fresh parsley before serving.
