Roast the Vegetables
Preheat the oven to 400°F (200°C). Spread corn, red bell pepper, and zucchini on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat. Roast for 20-25 minutes until tender and slightly caramelized.

Prepare the Pumpkin Seed Pesto
In a food processor, combine pumpkin seeds, basil leaves, lime juice, and a pinch of salt. Blend until smooth, adding olive oil gradually to reach desired consistency.

Assemble the Tacos
In a bowl, combine the roasted vegetables and black beans. Warm taco shells or tortillas according to package instructions. Fill each shell with the vegetable-bean mixture, top with crumbled queso fresco, and drizzle with pumpkin seed pesto.
