    Season the elk tenderloin with salt and Tellicherry pepper. Sear in a hot skillet for about 4-5 minutes on each side to reach medium-rare doneness. Let it rest before slicing.

Potato Nest

    Preheat the oven to 425°F (220°C). Grate the russet potatoes, mix with olive oil, salt, and pepper. Form into nests on a baking sheet and bake for 25-30 minutes or until golden brown.

Black Garlic Mashed Potatoes

    Make Mashed Potatoes

    In a pot, combine the mashed potatoes, black garlic, butter, and heavy cream. Mash until creamy and season to taste.
