    Prepare the Quinoa

    Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork.

    Prepare the Eggplant

    Preheat the oven to 400°F (200°C). Slice the heirloom eggplants in half lengthwise and scoop out some of the flesh to create a boat. Brush with olive oil, and season with salt and black pepper. Place on a baking sheet, cut side up.

    Cook Garlic Scapes

    Chop garlic scapes into small pieces. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped garlic scapes and sauté for 3-4 minutes until tender.

    Combine Filling

    In a bowl, mix the cooked quinoa, sautéed garlic scapes, and smoked tomato sauce. Stir until well combined.

    Stuff Eggplants

    Spoon the quinoa mixture into the prepared eggplant halves. Top with shredded aged cheddar cheese.

    Bake

    Bake in the preheated oven for 25-30 minutes until the eggplants are tender and the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven, sprinkle with fresh parsley, and serve warm.
