Preparing Guajillo Pappardelle

Mix Ingredients
In a large bowl, combine flour, guajillo chili powder, and salt. Make a well in the center and add eggs. Mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Roll and Cut
After resting, roll the dough out to about 1/8 inch thickness and cut into wide strips (pappardelle). Dust with flour to prevent sticking.

Preheat Grill
Preheat your grill to medium-high heat.

Prepare Lobster Tails
Using kitchen scissors, cut the top of the lobster shells down the center to expose the meat. Brush with olive oil and season with salt, pepper, and sambal oelek.

Combine and Serve
Cook the pappardelle in boiling salted water for 3-4 minutes. Drain and toss with sautéed corn. Serve grilled lobster tails on top of the pappardelle and corn.
