Crispy Grit Cake

    Prepare the Grits

    In a saucepan, bring water to a boil. Add salt and gradually stir in corn grits. Cook over low heat, stirring frequently, until thickened (about 20 minutes). Remove from heat and stir in butter and cheese. Allow to cool slightly.

    Form the Cakes

    Once cooled, mix in the egg and cornmeal. Pour the mixture into a greased baking dish and refrigerate for at least 1 hour until firm. Cut into squares.

    Fry the Cakes

    Heat oil in a frying pan over medium heat. Fry the grit cakes until golden brown and crispy on both sides. Drain on paper towels.

Green Chile Aioli

    Make the Aioli

    In a bowl, combine mayonnaise, roasted green chiles, minced garlic, lime juice, and salt. Mix well and refrigerate until ready to serve.

Citrus Salad

    Prepare the Salad

    In a large bowl, combine mixed citrus, red onion, cilantro, olive oil, salt, and black pepper. Toss gently and set aside.

Mexican White Prawns

    Cook the Prawns

    In a skillet, heat olive oil over medium-high heat. Add minced garlic and cook until fragrant. Add prawns, lime juice, salt, and pepper. Cook until prawns are pink and opaque (about 3-4 minutes).
