Pork Belly Preparation

Roast the Pork Belly
Preheat the oven to 300°F (150°C). Score the skin of the pork belly and season generously with salt and pepper. Place it in a roasting pan and roast for about 2.5 to 3 hours until tender. Let it rest, then slice into bite-sized pieces.
Fresno Mayonnaise Preparation

Make the Mayonnaise
In a bowl, combine mayonnaise, finely chopped Fresno peppers, and lime juice. Mix well and set aside.
Truffle-Balsamic Reduction Preparation

Prepare the Reduction
In a saucepan, bring balsamic vinegar to a boil, then reduce heat to low and simmer until it thickens, about 15-20 minutes. Remove from heat and stir in truffle oil.
Assembling the Tacos

Assemble the Tacos
Warm the heirloom tortillas on a skillet. Place a few pieces of roasted pork belly on each tortilla. Drizzle with Fresno mayonnaise, add slices of jalapeno, pickled onions, and a sprinkle of fresh cilantro. Finish with a drizzle of truffle-balsamic reduction.
