    Caramelize the Onions

    In a large pot or Dutch oven over a wood fire, melt the butter and olive oil together. Add the sliced onions and cook over medium heat, stirring frequently until the onions are soft and caramelized, about 30-40 minutes.

    Add Flavorings

    Stir in the minced garlic, thyme, salt, and black pepper. Cook for an additional 2 minutes until fragrant.

    Deglaze the Pot

    Pour in the white wine and scrape the bottom of the pot to deglaze. Allow the wine to simmer until reduced by half, about 5-7 minutes.

    Simmer the Soup

    Add the beef broth and bay leaves. Bring to a simmer and cook for 30 minutes, allowing the flavors to meld. Adjust seasoning as needed.

    Prepare the Toppings

    While the soup is simmering, preheat your wood fire for toasting the bread. Brush the slices of bread with olive oil and toast them until golden brown.

    Ladle the hot soup into oven-safe bowls. Top with grated Emmental cheese, and place the toasted bread on top. Return the bowls to the fire or oven until the cheese is bubbly and golden.
