Method
Chocolate Cake
Preheat the Oven
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
Mix Dry Ingredients
In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add Boiling Water
Carefully stir in the boiling water until the batter is smooth.
Bake the Cakes
Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick comes out clean.
Cool Cakes
Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Chocolate Mousse
Melt Chocolate
Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave, stirring until smooth.
Whip Cream
In a separate bowl, whip the heavy cream with sugar and vanilla extract until soft peaks form.
Combine Mixtures
Carefully fold the melted chocolate into the whipped cream until fully combined.
Gelatin Preparation
Dissolve the gelatin in water and let it bloom for a few minutes, then gently heat to dissolve and fold into the mousse.
Chill
Refrigerate the mousse for at least 2 hours before using.
Mirror Glaze
Prepare Gelatin
Soak gelatin in water to soften.
Add Chocolate
Remove from heat and add chopped chocolate, stirring until smooth.
Finish Glaze
Add the soaked gelatin and stir until fully combined. Cool slightly before use.
Strawberry Coulis
Blend Ingredients
Combine strawberries, sugar, and lemon juice in a blender until smooth.
Strain (Optional)
Strain the mixture through a fine mesh sieve for a smoother sauce if desired.
Chantilly Cream
Whip Cream
In a bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
Chocolate Ganache
Heat Cream
Heat the heavy cream until just simmering.
Combine with Chocolate
Pour the hot cream over chopped chocolate and let sit for a few minutes, then stir until smooth.
