Cooking the Chicken

    Prepare the Chicken

    Preheat your wood-fired grill to a medium-high temperature. Season the whole chicken with salt and pepper, ensuring even coverage.

    Place the chicken on the grill, breast side up. Cook for about 1 hour, basting occasionally with the house barbeque sauce until the internal temperature reaches 165°F (75°C).

    Remove the chicken from the grill and let it rest for 10 minutes before carving.

Preparing the Chive Whipped Potatoes

    Peel and chop the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes.
