    Prepare the Bone Marrow

    Preheat your oven to 450°F (232°C). Place the beef bone marrow pieces upright in a roasting pan. Drizzle with olive oil and sprinkle with pink Himalayan salt.

    Roast the Bones

    Roast in the preheated oven for about 15-20 minutes, or until the marrow is bubbly and starting to brown.

    Make the Gremolata

    In a bowl, combine chopped parsley, minced garlic, lemon zest, orange zest, and lemon juice. Mix well and set aside.

    Prepare the Crostini

    Slice the baguette into 1/2-inch thick slices. Brush each slice with olive oil and arrange on a baking sheet. Toast in the oven for about 5-7 minutes until golden brown.

    Serve the roasted bone marrow hot, topped with citrus gremolata, alongside the crostini for spreading.
