    Remove the New York Strip steak from the refrigerator and allow it to come to room temperature for about 30 minutes before cooking. Pat the steak dry with paper towels.

    Generously season both sides of the steak with kosher salt and black pepper.

    In a heavy skillet (preferably cast iron), heat the olive oil over medium-high heat until it's shimmering but not smoking.

    Add the steak to the hot skillet and sear for 4-5 minutes on one side without moving it. Flip the steak and cook for another 4-5 minutes for medium-rare, or longer depending on your preferred doneness.

    During the last minute of cooking, add the garlic cloves, fresh rosemary, and butter to the skillet. Spoon the melted butter over the steak as it finishes cooking.
