    Sauté the Base

    In a large pot, melt the butter over medium heat. Add the onion, carrot, and celery. Sauté until softened, about 5-7 minutes.

    Add Garlic and Tomato Paste

    Stir in the minced garlic and tomato paste, cooking for another 2 minutes until fragrant.

    Add Stock and Lobster

    Pour in the fish or seafood stock, bring to a simmer, and then add the chopped lobster meat. Simmer for 10 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend just half of it.

    Finish with Cream and Seasoning

    Stir in the heavy cream, créme fraîche, and season with salt and pepper to taste. Allow to heat through for an additional 5 minutes.

    Serve and Garnish

    Ladle the bisque into bowls and garnish with caviar, chopped chives, and a drizzle of paprika oil.
